Although technically not a whisky for the first 3 years, our new make spirit was carefully racked into full size ex-Bourbon barrels to begin the aging process in September 2010.

As with all fine spirits, a fine single malt whisky starts with the highest quality ingredients: We source our organic malted barley locally in Armstrong, BC, located 4 hours from our distillery. The barley is grown in the Salmon Valley and Peace River regions of BC and then carefully malted at the smallest malt house in North America. Our pristine water comes directly from the mountains behind the distillery.

Great whisky also starts with great new make spirit. Producing a true single malt under the Scotch Whisky Act, we prepare the mash and carry out the fermentation on site at our distillery. This means we know exactly what is in our mash and gives us full control over the quality of the fermented wash and distilled new make spirit.

We stick to tradition and add absolutely nothing to our mash or finished spirit: Water, 100% organic malted barley and yeast are our only ingredients.

In 3 years we will offer tastings at the distillery, however bottling will depend on the whisky itself. Stay tuned!

ONE YEAR OLD!

Today we are celebrating our new make spirit at one year of aging! We pulled a sample out for tasting and are pleased to report that it is coming along exceptionally.

At one year it is already picking up a beautiful golden straw hue. This is 100% natural - we do not and will not add any caramel colouring to our whiskies. Warming on the nose and palate with notes of dried fruit (apricots), malt & husk, fresh oak/wood, tobacco & leather vanilla. Medium long, mouth coating slightly astringent and warming finish.

These tastings of what's to come make the long wait worth it. We feel confident we are on the right path to producing a beautiful single malt whisky. Only two more years to go!

Victoria Whisky Festival

This was our first year participating in the Victoria Whisky Festival, Canada's premiere whisky event.

At five months old, our new make spirit is very young so we chose not to sample it at this year's festival.

However, we took the opportunity to chat to whisky lovers from all over on our upcoming 100% BC single malt and got a lot of positive feedback.

We can't wait until next year when, with a little more aging under the belt, we can pour samples for everyone!

Until then, we can say it is coming along very nicely - aromatic and fresh with a distinctly complex full body. Check back here for our tasting review at 6 months.
